Rotisserie Turkey Dinner - Thanksgiving Plate
Mushroom Cream Gravy Recipe

Ingredients: (serves 8)
1 Tbsp OLIVE OIL
½ cup YELLOW ONION ¼" DICE
1 tsp FRESH THYME CHOPPED FINE
¼ tsp SALT
4 oz (w) OYSTER MUSHROOMS DICED ¼"
4 oz (w) CRIMINI MUSRHOOM DICED ¼"
2 oz (w) SHITAKE DICED ¼"
¼ cup SHERRY DRY
2 cups CHICKEN BROTH
1 cup HEAVY CREAM
2 Tbsp A.P. FLOUR
2 Tbsp WATER
2 Tbsp ` BUTTER
¼ tsp. BLACK PEPPER
1. Heat oil in skillet over medium-high heat. Add onion and saute 1 minute. Add
thyme, salt, and mushrooms and sauté for about 8 minutes, or until
mushrooms are browned. Add sherry and cook until liquid evaporates. Stir in
broth and heavy cream. Bring to a boil and cook until gravy is reduced to about
2 cups (about 14 minutes).
2. Whisk together flour and water in a small bowl. Add mixture to skillet; return
to boil. Reduce heat to low and simmer until slightly thickened, about 2
minutes. Remove from heat; stir in butter 1 tablespoon at a time and pepper.
